Arroz Español ~ Spanish Rice

Arroz Español or Spanish Rice is a delicious side dish to enhance any meal. Long grain rice browned with onions and garlic then stewed in a chicken broth with diced tomatoes and topped with scallions, makes for one tasty side dish.

Believe it or not, Spanish Rice is not a Spanish recipe. It originated either in Northern Mexico or the South Western United States around the time of the Mexican Cession of 1848. So it is either a Mexican recipe or a Tex-Mex recipe, but we are not sure which.

This is a version that usually accompanies the typical Mexican dish at the typical Mexican restaurant in the United States. We have another version of this called Mexican Yellow Rice which we have attributed to the Northern Mexico region so we categorized it as a Mexican Recipe.

Regardless of where a rice dish is from, rice was first cultivated by man in Asia. The Spanish brought it to the Americas in the 1500’s.

Ingredients

Instructions

  • Sauté the onions and garlic, and toast the rice with the sautéed onions to a light brown color in medium heat.
  • Add 2 tsp cilantro, add the chopped tomatoes and 2 cups of chicken stock.
  • Close the lid and let the rice cook for 30 minutes.
  • Remove from heat and transfer to a bowl. Add chopped scallions and mix well.
