This year summer is hot, hot, hot!!! This Limber de Limón is a simple Lemon Ice treat made with lemons, sugar, water, and a splash of lime juice. For the adults, add a splash of coconut rum. So put on some Latin music, crawl into your hammock, relax with a cold cup of Limber de Limón, and enjoy the flavor of Puerto Rico.

The hardest part of this Limber recipe is the wait. Argh, matey! To get the fluffiest texture, mix the ice more than once while it’s freezing. You can also garnish with grated coconut and a fresh lemon slice. There are numerous variations, so it can also be prepared with coconut, mango, pineapple, or raspberries.

Although you might want to “put de lime in de coconut, and drank ’em bot’ up”, with this recipe you put de coconut in de lemon-lime and freeze em all up.

For adults, add a shot of coconut rum and some grated coconut. If you have a yearning for the Acapulco breeze, add a shot of Tequila and garnish with a lime. Be bold, be brave, and above all, be creative when making your limber. It’s the Puerto Rican way!

Limber de Limón ~ Lemon ice

Limber de Limón is frozen lemon-flavored ice that is easy to make, fun to eat, and will cool you off during the hot dog days of summer! Long live the Limber!

Ingredients

  • 2 cups lemon juice about 9 lemons squeezed
  • 2 cups sugar
  • 4 cups water
  • 2 tbs lime juice

Optional Ingredients

  • coconut shredded
  • coconut rum
  • tequila
  • lime slice

Instructions

  • Combine lemon juice, lime juice, water, sugar, and optional ingredients in a blender. Blend on high for 30 seconds.
  • Pour into ice trays or any small cups, mini bowls, cupcake pan or popsicle molds. Allow to freeze until solid.

Story of the Limber

You might not know that the roots of limber date back to when Charles Lindbergh flew his airplane to Puerto Rico on February 4th, 1928 (coincidentally, it was his 26th birthday). He was the first pilot to fly across the Atlantic Ocean and was greeted by the Puerto Rican people with frozen juice cups. Since then locals have been freezing juice and calling it “limber”.
