The Chimayó cocktail is the signature New Mexico drink. It pairs tequila with the full-flavored taste of apple cider, adding a bit of sweetness from the crème de cassis.
Pour the tequila and unfiltered apple cider into glass over ice. Add the lemon juice and creme de cassis and stir. Garnish and serve.

To prevent your sliced apple garnish from turning color, quickly dip the slices into a little lemon juice and shake off any excess.The Chimayó is a perfectly balanced cocktail in terms of its alcohol content. It should mix up to a cool 17 percent ABV or a 34 proof, making it just slightly stronger than a glass of wine.
