Instructions
Cook Chicken: Season chicken breasts with salt and pepper. In a large pan, heat some olive oil over medium heat and cook the chicken until golden and cooked through. Remove and shred with forks.
Sauté Vegetables: In the same pan, add a bit more oil if needed. Sauté the onion and garlic until they become fragrant and translucent.
Make Tinga Sauce: Add the chipotle peppers, diced tomatoes, cumin, and smoked paprika. Stir well and cook for a few minutes. Add the shredded chicken back into the pan. Mix well to coat the chicken with the sauce. Simmer for 10-15 minutes, allowing the flavors to meld.
Assemble Tacos: Warm the corn tortillas on a skillet. Place a spoonful of the chicken tinga on each tortilla. Top with sliced avocado, a sprinkle of cheese, and fresh cilantro.
Serve: Serve the tacos with lime wedges on the side. The lime juice adds a nice zesty flavor when squeezed over the tacos.
Notes
Adjust the amount of chipotle peppers to control the spice level.
You can add a dollop of sour cream to balance the spiciness.
