Cocadas, a beloved coconut confection, hail from the Hispanic culinary world, promising a delightful mix of sweetness and texture. These traditional treats, made predominantly from sweetened coconut, are a staple in many Latin American countries. The Coco Delight Cocadas will transport your taste buds straight to a tropical paradise!
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a large mixing bowl, combine the shredded coconut, sweetened condensed milk, vanilla extract, and a pinch of salt. Mix until well combined. If you're using almonds or raisins, fold them in now.
3 cups sweetened shredded coconut, 1 cup sweetened condensed milk, 1 tsp vanilla extract, Pinch salt, ½ cup chopped almonds or raisins
Using a spoon or your hands, shape the mixture into small mounds or balls, and place them on the prepared baking sheet.
Bake in the preheated oven for about 20-25 minutes or until the cocadas are golden brown.
Remove from the oven and allow them to cool completely on the baking sheet.
Notes
You can also add a hint of lemon or orange zest for a citrusy touch.
Cocadas can be stored in an airtight container at room temperature for up to a week.
