Equipment
- 1 Large sealable freezer bag
- 1 Grill
- 1 Grilling tongs
- 1 Sharp knife for testing doneness
Ingredients
- 1 ½ cups chicken broth
- ¼ cup El Yucateco Green Habanero Hot Sauce
- ¼ cup apple cider vinegar
- 1 teaspoon olive oil
- 1 teaspoon salt
- 1 tablespoon lime juice
- 2 pounds chicken thighs boneless and skinless
Instructions
- Take a large sealable freezer bag and combine the 1 ½ cups chicken broth, ¼ cup El Yucateco Green Habanero Hot Sauce, ¼ cup apple cider vinegar, 1 teaspoon olive oil, 1 teaspoon salt, and 1 tablespoon lime juice in it. Make sure it is sealed well and give it a vigorous shake to mix the ingredients thoroughly.
- Open the bag and introduce the 2 pounds chicken thighs to the marinade. Reseal the bag and give it another good shake. Use your fingers to massage the bag, ensuring the chicken is well coated with the marinade. Place the bag in the refrigerator and let it rest for at least 3 hours to allow the flavors to permeate the chicken.
- When you're ready to cook, preheat your grill to medium-high heat. Arrange the chicken thighs on the grill rack with the smooth side down. Cover the grill and let the chicken cook undisturbed for about 12-15 minutes. Then, using your grilling tongs, rotate the chicken once to create appealing grill marks.
- After rotating, let the chicken cook for another 12-15 minutes. Check for doneness by making a small cut in the thickest part of one of the thighs. If the juices run clear, your chicken is perfectly grilled. If not, continue grilling, checking for doneness every few minutes.
- Once done, remove the chicken from the grill and set it aside in a warm place.
- Serve this sizzling habanero heat grilled chicken with your choice of grilled vegetables and tortillas for a complete and delightful meal. Enjoy the burst of flavors in every bite!
Notes
- Marination Time: The longer you allow the chicken to marinate, the more flavorful it will be. If you have time, let it marinate overnight for maximum flavor.
- Heat Level: El Yucateco Green Habanero Hot Sauce is quite spicy. If you prefer a milder flavor, you can reduce the amount used. Conversely, if you love a good kick, feel free to add more!
- Chicken Cut: This recipe uses boneless, skinless chicken thighs, which tend to stay moist and juicy upon grilling. However, you can also use chicken breasts. Just be mindful that they may cook a bit faster and can dry out if overcooked.
- Grill Marks: The perfect grill marks are not just for looks! They also provide a delicious, slightly charred flavor. Ensure your grill is hot before you start, and resist the urge to move the chicken around too much.
- Test for Doneness: To ensure the chicken is fully cooked, use a meat thermometer if available. The internal temperature should reach 165°F (74°C) when inserted into the thickest part of the thigh.
- Serving Suggestions: This grilled chicken pairs wonderfully with a fresh green salad, grilled corn, a chunky avocado salsa, or a simple side of black beans and rice. The accompaniments can be customized as per your taste preferences.
- Leftovers: Any leftover chicken can be refrigerated and used in salads, sandwiches, or tacos for a quick meal the next day.
- Safety First: Remember to always wash your hands and any utensils or cutting boards that have come into contact with raw chicken to avoid cross-contamination.
