Baião de Dois is made with Black Eyed Peas and Rice. This Brazilian recipe has many variations, some add beef (carne de sol), while others add pork or cheese to the mix. This recipe uses Bacon and Cheese.

Baião de Dois ~ Black Eyed Peas and Rice

Mr. Rice and Mrs. Black Eyed Peas dance the Baião in a culinary treat that will have your taste buds joining the Baião dance.

Ingredients

  • 1 lbs black eyed peas
  • 2 tbsp oil
  • ½ cup bacon cut into small cubes
  • 1 onion grated
  • 2 cloves garlic crushed
  • ½ tbsp cilantro chopped
  • 2 cups rice
  • 2 tsp maggi seasoning
  • 1 tsp salt
  • 1 cup cheese curds chopped

Instructions

  • Soak the dried black eye peas in cold water for about 40 minutes.
  • Cook black eye peas. When done drain and reserve 2 cups of the cooking broth.
  • In another pan, heat the oil and brown the bacon, onion and garlic.
  • Add the cilantro and rice.
  • Sauté well and add the black eye peas, reserve cooking broth, maggi seasoning and salt.
  • Cover the pan and cook over low heat for about 15 minutes or until the rice is cooked and moist.
  • Mix the chopped rennet cheese and cover the pan so that the steam melts the cheese.

Did You Know

Baião is a traditional folk dance of the Brazilian Ceará region, which was popularized by two musicians, Humberto Teixeira and Luiz Gonzaga, in a song called Baião-de-Dois or Dance for Two. The name of the song attached itself to the dish of the same name where Mr. Rice and Mrs. Beans dance the Baião.
