This week’s addition to our Limber Family is the Peanut Butter Limber. The Limber de Mani is a Puerto Rican recipe for Peanut Butter Ice is made with peanut butter, sugar, water, and evaporated milk. Simply mix the ingredients in a blender until smooth, pour into plastic cups, and freeze until they are solid.

You can make these in cups, small bowls, a cupcake pan, or popsicle molds, or whatever you have on hand.

There are numerous variations, the Puerto Rican Limber can also be prepared with coconutlemonmangoPiña Coladapineapplebanana guava, strawberry, or raspberry to name a few. The hardest part about making a limber is the waiting.

These Peanut Butter Ice treats are the perfect solution for the hot days of summer. So put on some Latin music, crawl into your hammock, relax with a cold Peanut Butter Limber, and enjoy the flavor of Puerto Rico.

Limber de Mani ~ Peanut Butter Ice

Limber de Mani is a frozen Peanut Butter flavored ice that is easy to make, fun to eat, and will cool you off during the hot dog days of summer!

Ingredients

  • 1 ¼ cup water
  • cup sugar
  • cup peanut butter
  • ¾ cup evaporated milk

Instructions

  • In a small saucepan, combine water and sugar. Bring to a boil, stirring; let cool.
    1 ¼ cup water, ⅛ cup sugar
  • In a blender, puree peanut butter with the sugar syrup and evaporated milk. pour into a plastic cups and freeze until firm, at least 4 hours.
    ⅓ cup peanut butter, ¾ cup evaporated milk
