They say everything is bigger in Texas and this Texan Frito Chili Cheeseburger does not disappoint. This Tex-Mex recipe is made with a zesty Chili con Carne, grilled onions, Fritos, shredded cheese, piled high on top of a juicy beef patty. This sandwich is a monster of a cheeseburger and exactly what you would expect coming out of Texas.
The sandwich itself doesn’t take very long to make, but the majority of the time in this recipe is used to make the iconic chili con carne. You can make the chili several days in advance to allow the full flavor of the chili to work its magic.
Like the San Antonio Bean Burger, the burger uses Frito corn chips. No one knows why Tex-Mex burgers use corn chips on their hamburgers, but one thing is for sure, it adds a nice crunch to the burger.
So gather your ingredients and cook like you’re a Texan. Serve with fries and a tall glass of Texas tea for an authentic taste. Your family and friends will love this recipe.
What You Need to Make the Texan Frito Chili Cheeseburger
For the Chili Con Carne Recipe:
- 4 strips bacon chopped
- 1 lbs beef chuck roast or stew meat cut into small chunks
- 1 small onion peeled and chopped
- 2 cloves garlic minced
- 1 tbsp chili powder
- 1 tsp ground chipotle chili
- 1 tsp cumin
- 1 tsp dried oregano
- 14 oz kidney beans drained
- 14 oz tomatoes crushed or diced
- 1 tsp sugar
- ½ lime juiced
- 1 tbsp masa corn flour
- salt and pepper to taste
For the Chili Cheeseburger Recipe:
- 2 lbs ground chuck
- seasoning salt
- 1 large red onion sliced into rings
- 1 bag Fritos corn chips
- 2 cups shredded cheddar
- 6 hamburger buns
Time needed: 2 hours and 30 minutes
How to Make the Texan Frito Chili Cheeseburger
- Cook the Bacon
Place the chopped bacon in a medium saucepot over medium heat. Brown the bacon, then add the chopped beef roast, onions, and garlic, and cook another 5-8 minutes until the beef is browned on all sides. Stir occasionally.
- Add the Spices
Add the spices and sugar to the pot, along with the canned tomatoes and beans. Add ½ teaspoon salt and ½ teaspoon pepper. Stir and cover. Once the mixture comes to a boil, lower the heat and simmer for 1 ½ to 2 hours until the beef is very tender. (The smaller you chop the beef the faster this happens.) Once the meat is tender, add the masa and lime juice. Stir and allow the masa to thicken the chili for another 5 minutes. Salt and pepper to taste.
- Preheat the Grill
Once the chili is ready, Preheat the grill to high heat. Separate the ground beef and form it into 6 patties that are just slightly larger than the buns. Sprinkle both sides generously with seasoning salt.
- Grill the Patties
Grill the patties for 3-5 minutes per side. (I like mine a little pink, so three minutes per side is usually perfect.) Then grill the sliced onion rounds and hamburger buns for 1 to 2 minutes per side.
- Assemble the Burger
Place the grilled onions on the bottom bun, followed by the hamburger patty, a heaping scoop of hot chili, a hefty sprinkle of cheddar cheese, and a handful of Fritos. Place the top bun over the stack and press a little.

To assemble:
