They are very popular in the northern Mexican states like Chihuahua, Sonora, Nuevo León, and Baja California however, this recipe is from Mazatlán, Sinaloa.

In order to prepare the dish, warm tortillas are filled with a combination of shrimps, grated cheese, coriander, onions, and tomatoes. The tortillas are then folded in half, brushed with butter, and cooked on a griddle over medium heat.

This is a quick and easy recipe to make. Before you begin to make these irresistible Tacos Gobernador, start by chopping your onions, bell peppers, and shrimp. Prepare to cook the chopped ingredients by melting butter in a heated cast-iron skillet.

How to Cook Tacos Gobernador

Melt the butter and saute the onions and bell peppers in a cast-iron skillet. When the onions begin to turn translucent, add the shrimp and cook until done. Remove the mixture from the skillet and assemble the tacos. Lay the taco down into the hot skillet to toast on one side, flip and finish the other side before serving.

How to Cook Tacos Gobernador

  1. Saute the Vegetables

    In a large skillet (an iron skillet preferably), add some butter and saute the onions and bell peppers.

  2. Cook the Shrimp

    Cook until soft for about 2 minutes. Add the shrimp and cook for another 3 to 4 minutes or until the shrimp is no longer translucent. Note: Make sure not to overcook the shrimp as it can become rubbery.

  3. Assemble the Tacos

    Assemble the tacos by adding a layer of shrimp and top it with shredded cheese.

  4. Heat the Tortillas

    In a large skillet, melt some butter with 1 tablespoon of olive oil. Place the tacos open to warm up the entire tortilla.

  5. Fold and Cover

    As soon as the tortilla becomes soft, using a spatula, fold it to cover the shrimp side.

  6. Flip and Repeat

    Flip the tacos to brown the other side. Cook until crispy and the cheese has melted. Repeat the process until all tacos are done.

When served, Tacos Gobernador are often accompanied by lime wedges and hot chili sauce.

How to Store Tacos Gobernador

We do not suggest making more than you will eat as these tacos will not save well. If you must store them, keep your leftover tacos’ in the fridge for no more than 3 days. To reheat use a skillet to reheat the leftover tacos, a microwave will make them soggy and the shrimp rubbery.
