Minutas or Snow Cones can also refer to Shaved Ice is a refreshing Salvadorian recipe that is flavored with a variety of fruit syrups. Popular toppings include vanilla ice cream, mochi balls, tamarind syrup, fresh fruit, li hing powder, and a “snowcap” of sweetened condensed milk. Commonly found on minutas is a tamarind jelly that is used to top the minutas.

Summer is here and the heat is on. These delicious Minutas are made with shaved ice and covered in fruit syrup. This recipe has directions for mango, strawberry and coconut syrup but the possibilities are endless. So get out the shaved ice and use your imagination to make the perfect treat to cool down with.

  • Shaved ice snowy texture

For the mango syrup

  • 2 mangoes pealed and diced
  • ¾ cup sugar
  • 1 tsp vanilla extract
  • 1 cup water

For the strawberry syrup

  • 2 cups strawberries crushed
  • ¾ cups sugar
  • 1 cup water

For the coconut syrup

  • 1 cup grated coconut
  • ¾ cup sugar
  • ½ cup water
  • ½ cup evaporated milk


Mango syrup

  • Peel mangoes, cut the meat off the pit and dice it. Add mango meat to a small pot.
  • Add sugar, vanilla extract, and water. Stir to mix.
  • Bring to simmer over medium heat and turn the heat down to medium-low to low. Cover, leaving a crack for the steam to escape, and cook for about 30 minutes. Stir occasionally.
  • Once it's cooked, strain through a fine strainer. Press gently on some of the meat to get juices out.
  • Let cool completely.

Strawberry syrup

  • Boil the water in a large, non-stick saucepan.
  • Over medium heat, one minute after boiling, add the sugar, stirring constantly until boiling and thickening.
  • Add the crushed strawberries and mix well.
  • Stir another 5 minutes.
  • Remove from heat and let cool completely.

Coconut syrup

  • Boil the water in a large non-stick coated saucepan.
  • Over medium heat, 2 minutes after boiling, add the sugar and mix.
  • Add the grated coconut and evaporated milk.
  • Cook for 20 minutes over low to medium heat and allow to cool completely and thicken.


  • Place shaved ice in the bottom of a glass or saucer.
  • Drizzle liberally with cooled syrup, as desired.
  • Serve immediately.

History of the Minutas

The first documented shaved ice dessert was made in 27 B.C.E. The Roman Emperor Nero sent slaves to collect snow from nearby mountains that he then flavored with a fruit and honey mixture.

In 1919, a man named Samuel Bert invented a sno-cone machine and sold sno-cones at the State Fair of Texas. In 1934, the first ice block shaver was invented in New Orleans.
