Sopa de Pollo con Fideos or Chicken Noodle Soup is a Puerto Rican recipe that is common throughout the world but has its roots in Spanish cuisine. It is the Sofrito that gives all Puerto Rican food its distinct flavor and this dish is no rival. Be sure to use bone-in meat as it adds a rich flavor to the broth.
What are Fideos?
Fideos are very thin pasta noodles also known as vermicelli noodles. If you can’t find them, you can also use angel hair pasta, but it’s not as thin as vermicelli or fideo.
Why use Sofrito?
Sofrito is the basic building block of all Puerto Rican cuisine and can be added to beans, rice, soups, stews, you name it. It typically consists of aromatic ingredients cut into small pieces and sautéed or braised in cooking oil.

Ingredients
Chicken and Broth
- 2 lbs chicken shreded
- 4½ cups water
- 1 tsp salt
- ½ tbsp pepper
- 1 medium celery stalk trimmed
- 1 medium carrot sliced
- 1 small onion chopped
- 1 sprig parsley
Soup
- 2 medium carrots sliced
- 2 medium celery stalks chopped
- 1 small onion chopped
- 1 tbsp powdered or granulated chicken bouillon
- 1 cup uncooked medium noodles 2 oz
- 1 bunch fresh parsley chopped
- 3 tbsp sofrito
Instructions
Chicken and Broth
- Remove excess fat from chicken. Place chicken, giblets (except liver) and neck in 4-quart saucepan or deep pot. Add the other ingredients until boiling. Skim foam from broth; reduce fire. Cover and simmer for about 45 minutes or until the chicken juice is no longer pink inside when the thicker pieces are cut. Remove the chicken from the broth. Let the chicken cool for 10 minutes or until it is ready to touch. Strain the broth well; discarding the vegetables. Remove the skin and bones from the chicken. Cut the chicken into 1/2-inch pieces. Trim the fat from the broth.

- Prepare the chicken and broth. Refrigerate the cooked chicken pieces until they are about to be added to the broth. Add enough water to the broth to measure 5 cups. Heat broth, carrots, celery, onion, sofrito, and granulated chicken bouillon to boiling in 4-quart saucepan; reduce fire. Cover and simmer for 15 minutes or until carrots are tender.
- Add the noodles and chicken. Heat until boiling; reduce fire. Cook uncovered for 7 to 10 minutes or until noodles are done. Sprinkle with parsley.

Although Chicken Noodle Soup does not have any healing properties, it will surely make you feel better if you are sick.
