We named this sandwich the Three Amigos of Phoenix but it takes its lead from the famous Mexican sandwich, Torta Cubana. Instead of using three types of pork, this sandwich uses three types of meat, sliced roast beef, pulled pork, and pulled chicken.
This Tex-Mex sandwich is served on a toasted hamburger bun, coated with Mexican cream, the first layer starts with sliced roast beef, topped with the pulled pork, then a layer of caramelized onions, green peppers, jalapeno peppers, and queso cheese. The layers continue with pulled chicken and topped off with another slice of roast beef and finished with the top of the toasted hamburger bun.
The Three Amigos of Phoenix sandwich is a bit hot with jalapeno peppers and Mexican cream but it tastes wonderful. With this recipe, we include a recipe for a dried Chipotle Spice Mix that makes about ⅓ cup total. You will only need 2 teaspoons of it, so you can save the rest for another meal in a sealed jar.
This recipe also includes ingredients and directions to make Mexican cream which takes 12 to 24 hours total. If you do not want to make the Mexican cream, mix a cup of mayonnaise with 1 tbsp lime juice and 1 tsp Chipotle Mix to make Mexican mayonnaise in place of the Mexican cream.

Ingredients
Chipotle Spice Mix – makes ⅓ cup
- ½ tbsp crushed chipotle pepper
- 1 tbsp chili powder
- 1 tbsp paprika
- 1 tsp ground cumin
- 1 tsp garlic powder
- 1 tsp oregano
- 1 tsp ground coriander
- ½ tsp salt
Mexican Cream – makes 1 cup
- 1 cup heavy cream
- 2 tbsp buttermilk
- 1 tbsp lime juice (about the juice of 1/2 lime)
- 1 tsp Chipotle Mix ingredients and directions included
Base Ingreadents
- 8 roast beef thick-sliced
- 1 cup pulled pork
- 1 cup pulled chicken
- ½ onion sliced
- ½ green bell pepper sliced
- ¼ cup jalapeño peppers sliced
- 1 tsp Chipotle Mix ingredients and directions included
- queso cheese
- 3 tbsp unsalted butter
- 4 hamburger buns
Instructions
Chipotle Spice Mix – makes ⅓ cup
- Mix all ingredients together in a small bowl or plate.
Mexican Cream – makes 1 cup
- In a mixing bowl add heavy cream and buttermilk and stir together until combined.
- Cover tightly with plastic wrap or a lid and let sit in a warm spot for 12 to 24 hours*.
- Add lime juice, Chipotle Mix, and mix until well combined.
- Serve immediately or cover and store in the fridge for up to 2 weeks.
Cook the Base
- On medium-high heat, lightly grease a large nonstick pancake griddle.
- Spread butter on both slices of hamburger bun and place on the skillet. Press down with a spatual to sear the first side. When it's crisp and golden brown you can flip and repeat. When both sides are done, remove and set aside on a clean work surface.
- While the bread is cooking, use a mixing bowl to coat the onions, bell peppers and, jalapeño peppers with oil and ¼ tsp of Chipotle Spice Mix. Toss to coat evenly.
- In a mixing bowl coat the pulled pork with ½ tsp of Chipotle Spice Mix and mix well.
- In a mixing bowl coat the pulled chicken with ½ tsp of Chipotle Spice Mix and mix well.
- After the bread is cooked; Lower the heat to medium, place the pulled beef, pulled pork, and the peppers on the skillet to cook in seprate piles. Flip and stir as needed until the onions and peppers are tender and caramelized.
Build the Three Amigos of Phoenix
- Spread a thin layer of Mexican Cream on the bottom slice of bread.
- Place the first slice of roast beef on the bread. Sprinkle a small amount of Queso cheese on top.
- Put a layer of pulled pork on top of the roast beef. Sprinkle a small amount of Queso cheese on top.
- Put a layer of caramelized onions, bell peppers and, jalapeño peppers. Sprinkle a small amount of Queso cheese on top.
- Place the pulled chicken on top of the caramelized onion mix. Sprinkle a small amount of Queso cheese on top.
- Add the second slice of roast beef on top of that.
- Spread a thin layer of Mexican Cream on your top slice of bread and cover the sandwich.
