The Baleada is a Breakfast Taco that is a traditional Honduran recipe made with a flour tortilla and filled with refried beans, avocado, queso fresco cheese, and crema fresca (a Mexican product made from heavy cream and sour cream). In El Salvador there are pupusas, in Mexico there are tacos, but in Honduras there are Baleadas.

Often nicknamed the poor man’s burrito, this dish is believed to have originated on the northern coast of Honduras. Some additional ingredients people add are sausage, chicken, pork, plantains, diced tomatoes, onions, bell peppers, and hot sauce.

There are different kinds of baleada depending on the ingredients used to make them.

  • Baleadas Sencillas (refried red beans, crema, cheese)
  • Baleadas Especiales (refried red beans, crema, cheese, scrambled eggs)
  • Baleadas Súper Especiales (refried red beans, crema, cheese, scrambled eggs, chicken, ground meat or sausage)

Baleadas are a simple, yet delicious, breakfast dish that comes from the north coast of Honduras. They are made in a thick flour tortilla that is filled with refried red beans, a sprinkle of grated cheese, and cream.

Ingredients
  

Tortillas:

  • 2 cups all-purpose flour
  • 1 cup water
  • ½ cup vegetable oil
  • 1 egg
  • ½ teaspoon salt

Filling:

Instructions
 

  • Mix flour, water, vegetable oil, egg, and salt in a large bowl; knead until dough is smooth and no longer sticky.
  • Form the dough into 8 golf ball-sized balls. Cover and let rest, about 20 minutes.
  • Stretch each ball of dough into a thick tortilla.
  • Heat a large skillet over medium-high heat. Cook each tortilla until browned and lightly puffed, about 1 minute per side.
  • Layer refried beans, avocado, and queso fresco over tortillas. Drizzle crema on top; fold tortillas in half over filling.

Notes

Because the crema fresca can be hard to come by, to substitute, you can make your own version; mix two parts of sour cream with one part heavy cream.
Queso fresco can be replaced with feta cheese or mozzarella cheese.
