Think of the Chi-Chi Cocktail as the cousin of the infamous Puerto Rican Piña Colada. This cocktail recipe is a tropical mash of fresh pineapple, coconut cream, lime, and ice, just like the Piña Colada. But this drink will use vodka instead of rum and the garnish is a cherry as opposed to the pineapple garnish of the Piña Colada.
Homemade Pineapple Cup
Usually, Chi-Chi’s are served in a glass, but you can use the pineapple to make adorable Pineapple Cups to serve them in. The recipe calls for chopped pineapple so why not use it all. It makes for a cool presentation and adds aesthetics to your drink.
You will need to cut the top of your pineapple off and use a pineapple coring tool and a know to remove the pineapple meat from the intended pineapple cup. Once the meat is removed use a knife to cut off the core. Rince and you have a Homemade Pineapple Cup for your Chi-Chi Cocktail.

Ingredients
- 1½ cup whole pineapple chunks
- ¼ cup pineapple juice
- 2 tbsp coconut cream
- 4½ oz vodka
- 1 tbsp cane sugar adjust to taste
- 3 cups ice
Garnish:
- cherry
- orange slice
- toasted coconut
Instructions
- In a high speed blender, add the pineapple chunks, juice, coconut cream, vodka, sugar and ice. Blend on high speed until the mixture is smooth yet still icy cold. Taste for sugar adjustment if needed.
- Pour into serving glasses and garnish with toasted coconut, orange slice, and a cherry.
