Ingredients
  

MINT SIMPLE SYRUP:

  • 1 cup white sugar
  • 1 cup water
  • cup fresh mint leaves

MANGO MOJITOS:

  • 1 cup mango purée
  • 2 cup white rum 16 ounces
  • 1 cup fresh lime juice 6-8 limes
  • 2 cup club soda

GARNISH:

  • Fresh lime wedges
  • Mint sprigs

Instructions
 

MINT SIMPLE SYRUP:

  • In a small saucepan set over medium-high heat, bring sugar and water to a low boil/simmer.
    1 cup white sugar, 1 cup water
  • Stir until the sugar dissolves and then add in the mint leaves. Simmer 3-4 more minutes, without stirring.
    ⅔ cup fresh mint leaves
  • Pour the simple syrup over a mesh strainer set over a glass jar.
  • Allow the simple syrup to cool in the refrigerator for about 30 minutes.

MANGO MOJITOS:

  • Once the simple syrup has cooled, pour it into a large pitcher followed by the mango puree, rum and lime juice.
    1 cup mango purée, 2 cup white rum, 1 cup fresh lime juice
  • Stir. When ready to serve, add the club soda and gently stir. Pour into ice-filled glasses and garnish with lime wedges and fresh mint leaves.
    2 cup club soda, Fresh lime wedges, Mint sprigs

Notes

Use fresh mango puree when available, else you can use canned puree or mango juice
