Ingredients
MINT SIMPLE SYRUP:
- 1 cup white sugar
- 1 cup water
- ⅔ cup fresh mint leaves
MANGO MOJITOS:
- 1 cup mango purée
- 2 cup white rum 16 ounces
- 1 cup fresh lime juice 6-8 limes
- 2 cup club soda
GARNISH:
- Fresh lime wedges
- Mint sprigs
Instructions
MINT SIMPLE SYRUP:
- In a small saucepan set over medium-high heat, bring sugar and water to a low boil/simmer.1 cup white sugar, 1 cup water
- Stir until the sugar dissolves and then add in the mint leaves. Simmer 3-4 more minutes, without stirring.⅔ cup fresh mint leaves
- Pour the simple syrup over a mesh strainer set over a glass jar.
- Allow the simple syrup to cool in the refrigerator for about 30 minutes.
MANGO MOJITOS:
- Once the simple syrup has cooled, pour it into a large pitcher followed by the mango puree, rum and lime juice.1 cup mango purée, 2 cup white rum, 1 cup fresh lime juice
- Stir. When ready to serve, add the club soda and gently stir. Pour into ice-filled glasses and garnish with lime wedges and fresh mint leaves.2 cup club soda, Fresh lime wedges, Mint sprigs
